Mom's Cowboy Calico Beans

1-2 lb. hamburger
1/2 lb. slab bacon
1 large diced green pepper
2-3 stalks celery…diced
8 oz. can mushrooms drained or 8 oz. fresh mushrooms (chopped)
1 onion, chopped
24 oz. can Bushes baked beans
15 oz. can kidney beans, drained
15 oz. can butter beans, drained
2 cans pork & beans
2 cans pinto beans, drained
1 can ro-tel diced tomato with green chilies
1 c. catsup
1 c. brown sugar
1 tbsp. vinegar
2 tbsp. dry mustard
2 tbsp. dark molasses

Brown and drain hamburger. Slice bacon into bite sized pieces; brown and drain. Sauté onion and green pepper, celery and mushrooms in bacon grease. Combine meat, sautéed onions & veggies and beans in large casserole. Blend all other ingredients to make sauce. Pour over bean/meat mixture. Cover and cook 1 hour at 350 degrees. Cut through to serve.

Some people like BBQ sauce added to the mix. I don’t. Also I have had this with small weenies chopped or polish sausage, ground turkey or ground pork would also work.

I’d get 2 lbs. of the 80-84% hamburger. The 93% doesn’t have as much flavor.

Chicken 65

We tried another Indian dish this past Saturday night. Had it over some rice with naan and samosas on the side. Very tasty indeed.
The how-to video we watched is here... http://www.youtube.com/watch?v=aq2CHgm7hZA

Chicken 65
2-3 pounds of chicken breast, cut into bite-sized pieces.

Mix in with chicken breast:
1 tsp red chili powder
Salt to taste
1 tsp ginger paste
1 tsp garlic paste
½ tsp garam marsala
1 Tb cornstarch
1 Tb refined flour
1 egg

Take 1 lemon and press it down on the counter. Cut in half. Add ½ lemon juice.

Into hot oil, put one piece of chicken at a time. Fry chicken until it is crisp.

Remove chicken. Discard almost all of the oil (save one 1 Tb.)

Blend together:
½ cup yogurt
½ tsp chili powder
Add:
½ tsp refined flour

Using a High flame add:
Add 1 tsp cumin seeds
1 tsp mustard seeds
4-5 whole red chilis, broken into half
15-20 curry leaves.

Add yogurt mixture.

Add chicken that was fried.

Toss until the chicken absorbs the yogurt and gets coated and whole mix is dried.

Add 2 Tb. Coconut
Give final toss to mix in coconut.

Pivec Stuffing

This stuffing recipe involves a lot of prep. We often chop the onions and celery the night before and then break apart the bread to leave it in bowls overnight.

Here's a picture of the leftovers the next day...way too much going on Thanksgiving Day for me to snap a picture...

Pivec Stuffing

4 loaves of white bread, broken into bite size chunks
2 sticks of butter
1 package of celery (with leaves chopped in as well), stalks diced.
1 large onion, diced
2 eggs
1 can of chicken broth
4 cans of sage

Break the bread into bite size chunks the night before. Cover bowls with paper towel and let sit at room temp overnight to dry them out a bit.
Dice the onion and celery. Simmer the butter, onion and celery until celery is tender.
Mix eggs into the bread. (We end up with three big bowls of bread and put 1/3 of the eggs into each bowl.)
Mix the celery/onion into the bread. (We actually do this 1/6 at a time, so each bowl gets two separate mixes.)
Add in the broth (again, 1/6 for each bowl. Each bowl twice.)
Add in the sage. (We do 1/3 of a can in each bowl; mix; next 1/3 of a can in each bowl; mix...on through all four cans. Dan is very specific about doing small batches and making sure the ingredients are thoroughly mixed in.)
Put all the stuffing into a 13x9 pan or stuff the turkey and put the rest of the stuffing into a pan. Bake 350 45-60 minutes depending on amount in the pan.
